- 600g Minced Beef
- 200g Mushrooms Chopped
- 100g Blue Cheese. (Roquefort, Stilton, Danish Blue), Crumbled
- 2 shallots or 1 small red onion, finely sliced
- Knob of butter
- Black pepper
Melt the butter in a pan and cook the shallots over a medium heat until soft, about 5 mins. Add mushrooms and cook until soft and most of the liquid has evaporated, about 7-8 mins. Meanwhile, season the minced beef with pepper and shape in to 8 thin burgers. Divide mushroom mixture between 4 of the burgers and top with crumbled cheese. Place other burgers on top and press around the edges to seal mixture in. Cook for about 7-8 minutes each side or until thoroughly cooked, taking care when turning them over.
