"Almost Traditional Burgers"

Preparation time: 10 minutes                                                                                                        Cooking time: 12 minutes                                                                                                                    Serves: 6

1 & 1/2 lbs of minced beef                                                                                                                           3/4 cup quick/old fashioned oatmeal, uncooked                                                                                  1/2 cup onion or green bell pepper, finely chopped                                                                              1/3 cup ketchup, tomato puree, beer, red wine or milk (combination if preferred)                            1 egg                                                                                                                                       salt/pepper/seasoning of your choice

Using your hands mix all ingredients together in a bowl. season with salt and pepper to your taste . shape to form 6 round burgers and chill in the fridge for at least an hour to firm. cook about 5 inches from a medium heat, 5-6 minutes per side , or untill thoroughly cooked.

Serving Suggestions: seseme seed buns, crisp lettuce, slice of Emmentel/Gruyere Cheese, Tomato and Onion.

"Thai Burgers"

Preparation time: 20 minutes                                                                                                         Cooking time: 16 minutes                                                                                                                Serves: 4

600g Minced Beef                                                                                                                                           2 de seeded red chillies finely chopped                                                                                                    4 spring onions, finely sliced                                                                                                                         1 garlic clove, crushed                                                                                                                                     4 tbsp fresh coriander, chopped                                                                                                                    1 tbsp thai fish sauce (available from most good stores)                                                                        2 tsp sesame oil                                                                                                                                            Juice of 1 Lime                                                                                                                                                5 water chestnuts, drained and finely chopped                                                                                     Oil for Brushing

Using your hands, Mix together in a large bowl , shape in to 4 round burgers and chill in th fridge for at least and hour to firm. brush each with a little oil. cook about 5 inches from a medium heat , 7-8 minutes per side or until thoroughly cooked.

"Blue Cheese and Mushroom Burger Sandwich"

Preparation time: 20 minutes                                                                                                          Cooking time: 30 minutes                                                                                                                   Serves: 4

600g Minced Beef                                                                                                                                    200g Mushrooms Chopped                                                                                                                  100g Blue Cheese. (Roquefort, stilton, danish blue), Crumbled                                                            2 shallots or 1 small red onion, finely sliced                                                                                               Knob of butter                                                                                                                                                    Black pepper

Melt the butter in a pan and cook the shallots over a medium heat until soft, about 5 mins. Add Mushrooms and cook until soft and most of the liquid has evaporated , about 7-8 mins. Meanwhile , season the minced beef with pepper and shape in to 8 thin burgers. divide mushroom mixture between 4 of the burgers and top with crumbled cheese. place other burgers on top and press around the edges to seal mixture in. cook for about 7-8 minutes each side or until thoroughly cooked, taking care when turning them over.

Serving Suggestions: Sesame Seed Buns (toasted) , Apple and green leaf salad:

"Minute Steak Fajita's" - Serves 2/3

Minute Steaks are great for fajita's, they're the cheapest steak cut and lend themselves well to being cooked in small strips.  

Slice 0.5kg steak into very thin strips (tenderise first if preferred).  Toss strips in a paprika, chilli powder, cumin and oregano mix.  Heat 1 tsp of oil and saute beef adding more spice to taste.  When beef is cooked remove steak.  Add another tsp of oil, 1 chopped onion and 1 or 2 red and/yellow peppers.  Saute the mixture until preferred crispness.  Return steak and warm through quickly.  Serve immediately with tortillas, grated cheese, lettuce, salsa, sour cream and guacamole.  To assemble a fajita, put mixture in warm tortillas and add sauces etc and wrap them up.

Salsa - Mix chopped fresh tomotoes, onions, garlic, lemon and lime juice, chopped coriander, chillies, tiny amount of oil and a small pinch of sugar to taste.

Guacamole - Use some of your salsa, add a mashed avocado, extra lime juice and a pinch of sugar and salt to taste.
